Dassai Shochu - 720ml

From the renowned Asahi Shuzo brewery comes a spirit that bridges the gap between sake and shochu. Dassai Shochu is a rare "Kasutori" shochu, crafted by distilling the fresh sake lees (kasu) of Dassai’s famous Junmai Daiginjo.

While most shochu is made from sweet potato or barley, this unique spirit captures the fruity, floral elegance of top-tier sake. By distilling the lees on the very same day the sake is pressed, Dassai preserves the delicate aromatics of Yamada Nishiki rice, notes of melon, peach, and white flowers, that usually vanish in standard distillation.

Bottled at 39% ABV, it is designed to be lighter than a whiskey but more potent than sake, delivering a clean, crisp finish that lingers beautifully. It is a spirit born from the pursuit of perfection, ensuring that not a single drop of the brewery's craftsmanship goes to waste.
